Sheet pan quesadilla: ground beef
Use 2 cups cooked off and seasoned ground beef. What do you season it with? I use taco seasoning.
Personally? When I make taco meat, I like to make a double batch as I am planning to whip up ground beef sheet pan quesadillas a few days later.
And yes, you could use ground turkey instead of ground beef if you want.
Sheet pan quesadilla: chicken
For sheet pan quesadillas chicken, you can use cooked and shredded or diced chicken. If you are using a store-bought rotisserie chicken, that would be perfect for this recipe!
How do you season it? You can use any of your favorite Mexican spices. We recommend using a mix of cayenne pepper, chili powder, cumin, and garlic powder. However, feel free to get creative and use whatever spices you like!

Sheet pan black bean quesadillas
For a vegetarian sheet pan quesadilla, you can use black beans in place of the ground beef or chicken. Simply rinse and drain a can of black beans, and think about mixing in a little pico de gallo. ven pinto beans would work!

The nice thing about adding beans to your diet? They are a fantastic source of protein and fiber! They are often on sale for roughly $0.79 a can and store for several years. That makes these a fantastic budget-friendly option to stuff your quesadillas with.
Sheet pan veggie quesadillas
If you are looking for a quesadilla that is packed with veggies, then sheet pan veggie quesadillas are the way to go. You can use any type of vegetables that you like in this recipe. We recommend using some diced onion, bell peppers (green bell pepper, or red bell pepper) and/or tomatoes in your veggie mixture.
If you take a few minutes to slice and dice them, then sautee them in a skillet over medium heat, you will have a better final product.
Do you have to use Mexican Cheese Blend?
No, not at all! We have used cheddar cheese, Monterey Jack, and even pepper jack cheese to great success. You could probably even get away with vegan cheese.

If this is your first time trying a sheet pan meal, once you bite into that melty cheese goodness you will fall in love with this fun way to whip up a meal while keeping everything simple.
Sheet Pan Quesadilla Ingredients:

- 8 large burrito size flour tortillas
- 2 cups seasoned shredded chicken breast or ground beef, cooked
- 4 oz green chilis
- ½ cup black olives, sliced
- 1 cup frozen corn
- ½ cup salsa
- 4 cups Mexican cheese blend, shredded
- 3 tablespoons butter, melted
- Seasoning mix of your choice, to taste – taco, chili lime, etc.
How to Make Sheet Pan Quesadillas:
Preheat oven to 450 degrees line a baking sheet with parchment paper, making sure to go up to the edge of the pan.

Lay tortillas on the baking sheet, 2 on each long side, 1 on each end, 1 in the middle – leave about half of each tortilla hanging over the side of the pan

Begin layering the simple ingredients 2 cups cheese, chicken or beef, a sprinkle of seasoning, green chilis, olives, corn, salsa, then remaining 2 cups cheese

Place the remaining tortilla in the center of the pan on top of the ingredients.

Beginning with the ends, fold in the overlapping pieces of tortilla – you will want long sides folded over last

Brush the entire surface with melted butter.

Place a second sheet pan on top, press down, and place in the oven
Bake for 25 minutes

Let cool slightly, cut into squares, garnish with your favorite toppings like sour cream, cilantro, salsa, cheese, avocado, etc. per your taste. I even sprinkle a few green onions on top of the tortillas.

How do you store leftover quesadillas?
If you have any leftover quesadillas, then you can store them in the fridge in an airtight container. They will last for a few days, and they make a great lunch or snack! You can also freeze them if you want to save them for later. Just wrap them up in some plastic wrap and place them in a freezer-safe bag. They will last for a few months in the freezer.
