Beef Tostadas with Black Beans

I know you can purchase beef tostadas in the frozen foods section of many grocery stores but make them from scratch at home – it’s easy! You only need about 30-45 minutes (depending on how long you cook your beef) so these are a great idea for quick weeknight meals when you don’t have time to spend hours cooking dinner.

Ground beef is cooked with onion, a can of petite diced tomatoes, a small can of green chilis, a can of refried beans, and a can of refried black beans. Add a little water and stir in a packet of taco seasoning…and yum!

The beef mixture is what really makes this dish stand out: flavorful beef cooked down, placed on a crispy shell, and topped with fresh vegetables with other toppings like sour cream, avocado or salsa can be added as desired.

A few weeks back, I had a killer migraine and Mom & Pop came to the rescue. Sarah and I were whisked away to their house so I could recoup from the morphine shot and so my kiddo wouldn’t be unsupervised.

Pop was making his legendary beef tostadas for dinner — I don’t remember much about that evening but DO remember that heavenly smell! Here is his recipe, we recreated it for dinner this week and it tasted as good as I remember it smelling! I couldn’t eat Pop’s because I was so sick…but it sure made my mouth water, LOL!

Easy Beef Tostadas

Tostadas need a crispy shell for the base. You can either fry it or bake them. We found some pre-made/pre-fried shells in the frozen food section and heated those up for our beef tostadas base but you could make your own if desired. If you want to fry them yourself, make sure you fry them quickly in plenty of oil.

How to pan-fry flour tortillas:

– Pour a thin layer of oil on the bottom of a pan and heat up to medium/high. You’ll want enough fat so that it covers the entire surface area, about a half-inch or more in height if possible.

– Add flour tortillas one at a time and let fry for 30 seconds before flipping them over with tongs or kitchen utensils and frying an additional 15-30 seconds until they are crispy brown around all sides **Watch carefully as they may burn quickly! Fry only once side at first – you can go back through later if necessary for multiple batches (do not stack while cooking).

When you remove them from the pan, place them on a plate that is lined with paper towels – that will help drain off any excess grease.

While they are cooling, cook-off some ground beef with a small diced onion, and drain the fat.

Chop lettuce, tomato, onion, green pepper – whatever you like for toppings. We kept it simple with just lettuce.

Frost the crispy shell with the meat mix, top with grated cheese and then build your salad on top of it. Here we used fresh sliced avocado!

We sprinkled a bit of taco sauce on top and dug in. Guess what? It was as tasty as I remembered it smelling, LOL!

Freeze Ahead Beef Tostadas

You COULD pre-prep this to save a bit of time for those evenings you are in a rush…precook the tortillas, they will keep. Make the meat mix ahead of time, etc and there is no rule that you have to use ground beef! You could do shredded chicken, ground turkey – even pulled pork!

Bad news WIeght Watchers friends, this has a huge 13 FreeStyle SmartPoints per Tostada. It is mainly because of the oil used to fry the shells base, but it will be a lot less if you switch out the beef for chicken. Ground chicken breast is on the 0 points list!
