Scrumptious Bacon Wrapped Pork Loin Sheet Pan Dinner

Scrumptious Bacon Wrapped Pork Loin Sheet Pan Dinner


You will need:
2 tsp. minced garlic
1-1/2 tsp. salt
1/2 tsp. black pepper
6 tbsp. olive oil, divided
3 lbs. pork tenderloin
8-10 oz Peppered bacon
1 lb. fingerling potatoes
1 each red, yellow, orange peppers, sliced
1/2 lb fresh french green beans ends cut off

Directions:
Preheat oven to 425 degrees.
Rinse pork, pat dry and place on a work surface.
Rub the garlic, salt and pepper over the tenderloin.
Take bacon strips and wrap the tenderloin.
It will take about 8 strips.
Cup your potatoes into small slices , trim the edges of the green beans and slice the peppers into small slices.
Place all of the potatoes and vegetables in a bowl and toss in olive oil
Secure the pork with having the edges of bacon are on the bottom.
Cover the baking sheet with parchment paper.
Place pork on baking sheet bacon edges side down.
In a large bowl, toss the cut up potatoes, bell peppers, green beans in olive oil.
Add salt & pepper to taste on the vegetables.
Place vegetables around pork tenderloin.


Roast in oven for 40 minutes.
