- 6 tbsp. olive oil, divided
- 3 lbs. pork tenderloin
- 8-10 oz Peppered bacon
- 1 lb. fingerling potatoes
- 1 each red, yellow, orange pepper, sliced
- 1/2 lb fresh french green beans, ends cut off
How to make our Bacon Wrapped Pork Loin
Preheat the oven to 425 degrees.
Rinse the pork, pat it dry, and place it on a work surface.
Rub the garlic, salt, and pepper over the tenderloin.
Take the bacon strips and wrap the tenderloin with them, it will take about 8 strips.
Cup your potatoes into small slices, trim the edges of the green beans and slice the peppers into small slices.
Place all of the potatoes and vegetables in a bowl and toss in olive oil
Secure the pork by having the edges of bacon are on the bottom.
Cover the baking sheet with parchment paper, then place the pork on the baking sheet with the bacon edges side down.
In a large bowl, toss the cut-up potatoes, bell peppers, green beans in olive oil.
