Before assembling the casserole, you must cook the sweet potatoes until they are fork tender. We like to boil ours, but you can also bake or microwave them.

To bake them, you need to wash them, wrap them in foil and place them on a baking sheet. Cook at 425 degrees for 30-40 minutes, or until they are soft to the touch.

If you’re short on time, you can also cook them in the microwave. Just place them in a microwave-safe dish with a little water and cook on high for four minutes, then check to see if they’re done. If not, cook for another two minutes.

To boil 6 large sweet potatoes, peel and cube them, then add them to a large pot of boiling water. Cook for 15-20 minutes, or until they are fork-tender.
