Tater tots bring back great childhood memories for me…I remember standing on a kitchen chair and helping my mom make dinner. My job was to put the tots on the casseroles. Let’s face it – potatoes are a great way to stretch a meal and tater tots certainly fit that bill. A bag of Ore Ida russet gems is often on sale for under $2 – add in a pound of boneless skinless chicken breasts for another $2 and you have a hearty meal started for just four bucks with this chicken tater tots casserole.

Cheesy Chicken Tater Tots Casserole

Here is another EASY and SIMPLE dinner recipe  – for the slow cooker – whichever one you choose to use. Do you have a Crock-Pot? Instant Pot like me? Or are you in love with the Ninja Foodi? It doesn’t really matter – this recipe will work with all of them and the best part? It doesn’t use a can of condensed soup to whip it up.

As for the tater tots – you CAN make those from scratch too. The best recipe I have found so far – is this one: here. No pressure to go that far – you will see me using homemade tots in my pictures but you can easily use that bag of grocery store frozen tater tots too!

Most recipes for chicken tater tot casserole use a can of condensed cream soup to be the base of the “gravy” that holds this all together. This is a slightly cleaner recipe that uses milk and cheese instead. Your only processed item is really the bag of frozen tater tots – which are pretty unprocessed compared to that soup.

You will need:

  • 1 (32 oz.) bag frozen tater tots
  • 1 (3 oz.) bag bacon pieces OR half of a pound of bacon, cooked and chopped up
  • 1 pound boneless, skinless chicken breasts, diced (raw)
  • 2 cups shredded cheddar cheese
  • 3/4 cup milk
  • salt and pepper to taste

Cheesy Chicken Tater Tots Casserole instructions:

Spray slow cooker with nonstick cooking spray OR insert one of those Reynold’s Slow Cooker Liners (LOVE those and usually almost FREE with coupons). Layer half of the frozen tater tots on the bottom of the slow cooker.

Sprinkle with 1/3 of the bacon pieces. Top with 1/3 of the shredded cheese.
Add diced chicken on top. Season with salt and pepper.

Now add 1/3 of the bacon pieces and another 1/3 of shredded cheese, and then put the rest of the frozen tater tots on top.

Finish with the remaining 1/3 cheddar cheese and the remaining 1/3 of bacon pieces. Pour 3/4 cup milk all over the top. Cover and cook on low for about 4-6 hours.
