First of all, chicken is a great source of protein as chicken is low in fat and calories. Chicken is a good source of vitamins and minerals, including potassium, selenium, and B vitamins also! To top it all off, chicken is often under two dollars a pound, making it a family favorite.

Pro Tip: Have the meat counter of your grocery store dice the boneless skinless chicken breasts for you. There is no additional charge and it will save you a bunch of time.

How do we store leftover chicken tater tots casserole?

The chicken tater tot casserole will last in the fridge for up to four days or can be frozen for up to two months. If you are freezing it, we recommend using a freezer-safe container. When you are ready to eat it, just let it thaw in the fridge overnight and then reheat in the microwave or oven.

Here is another EASY and SIMPLE dinner recipe  – for the slow cooker – whichever one you choose to use. Do you have a Crock-Pot? Instant Pot like me? Or are you in love with the Ninja Foodi? It doesn’t really matter – this recipe will work with all of them and the best part? It doesn’t use a can of condensed soup to whip it up.

As for the tater tots – you CAN make those from scratch too. The best recipe I have found so far – is this one: here. No pressure to go that far – you will see me using homemade tots in my pictures but you can easily use that bag of grocery store frozen tater tots too!

Most recipes for chicken tater tot casserole use a can of condensed cream soup to be the base of the “gravy” that holds this all together. This is a slightly cleaner recipe that uses milk and cheese instead. Your only processed item is really the bag of frozen tater tots – which are pretty unprocessed compared to that soup.

You will need:

  • 1 (32 oz.) bag frozen tater tots
  • 1 (3 oz.) bag bacon pieces OR half of a pound of bacon, cooked and chopped up
  • 1 pound boneless, skinless chicken breasts, diced (raw)
  • 2 cups shredded cheddar cheese
  • 3/4 cup milk
  • salt and pepper to taste

How to make Cheesy Chicken Tater Tots Casserole:

Spray the slow cooker with nonstick cooking spray OR insert one of those Reynold’s Slow Cooker Liners (LOVE those and usually almost FREE with coupons). Layer half of the frozen tater tots on the bottom of the slow cooker.

Sprinkle with 1/3 of the bacon pieces. Top with 1/3 of the shredded cheese.
Add diced chicken on top. Season with salt and pepper.

Now add 1/3 of the bacon pieces and another 1/3 of shredded cheese, and then put the rest of the frozen tater tots on top.

Finish with the remaining 1/3 cheddar cheese and the remaining 1/3 of bacon pieces. Pour 3/4 cup milk all over the top. Cover and cook on low for about 4-6 hours.
