Don’t save this recipe for only in the fall, enjoy this comforting breakfast anytime you need a pick-me-up. Hands down, overnight oats are one of the easiest breakfast treats you will ever make and they make for a delicious breakfast.

What are overnight oats?

Simply put, overnight oats are cold overnight oatmeal. You soak your favorite type of oats overnight in a liquid such as milk, yogurt, or plant-based milk. In the morning voila, you have an already-cooked breakfast waiting for you in the fridge!

Overnight oats are made by soaking rolled or steel-cut oats overnight in the refrigerator with milk, yogurt, or other liquid of your choice. By allowing them to soak overnight, the oats become soft and creamy while still maintaining their texture – making them an ideal breakfast for those who are short on time but crave something hearty.

Benefits of making overnight oats

Making overnight oats with pumpkin spice is a great way to enjoy the health benefits of overnight oats while also indulging in the delicious flavor of pumpkin spice. Pumpkin spice overnight oats are packed full of protein, fiber, and other essential nutrients that will help keep you feeling energized throughout the day. Plus, they’re incredibly quick and easy to make – just mix the ingredients together, let it sit overnight, and breakfast is ready!

What kind of oats are best to use?

Rolled oats are the most popular choice for overnight oats because they absorb liquid easily and become soft overnight. You can also use steel cut oats or quick-cooking (quick oats) oats, but they will take longer to absorb the liquid. Choose whichever type of oat you prefer depending on your preferences – all types of oats work great in overnight oats!

What kind of milk do you use?

You can use any type of milk you like when making overnight oats. Cow’s milk, almond milk, oat milk, soy milk, and even Greek yogurt all work great. For a vegan option, you could also use coconut milk or other plant-based milk. Choose whichever liquid you prefer depending on the desired taste and creaminess of your overnight oats.

My favorite?

I like to use almond milk. I think it gives a nice flavor in addition to any spices I may use.

Steps for preparing your overnight oats

In general, it is a pretty simple process for the most basic overnight oats recipe:

  1. Choose your milk and oats
  2. Select your mix-ins and toppings, if desired
  3. Assemble ingredients in a mason jar or other airtight container
  4. Store the jar in the refrigerator overnight

That is really what it boils down to – it is pretty simple.

What kind of mix-ins do people use?

When making overnight oats, some popular mix-ins to include are nut butters like peanut butter or almond butter, fruits, nuts, chia seeds, flax seeds, hemp seeds, cacao powder, and spices. Other mix-ins you could use are diced apples or bananas, raisins, maple syrup, protein powder, your favorite jelly, or even pumpkin puree.

Favorite toppings are also a great way to add some extra flavor and crunch to your overnight oats. Some popular toppings are shredded coconut flakes, nuts, seeds, granola, fresh fruit like fresh berries, or even chocolate chips!

Here is the favorite of our overnight oat recipes – it is a healthy breakfast option and one I find myself whipping up on a Sunday night so I am all set for the week.

What do you need?

  • Pumpkin Puree – can you have pumpkin spice overnight oats without pumpkin? Do not get pumpkin pie filing as it is way too sweet.
  • Almond Milk – this is a favorite milk of mine to use but other non-dairy milk flavors work too.
  • Rolled Oats – you can use either regular or quick oats
  • Walnuts – for the crunchy texture
  • Honey – for a hint of sweetness
  • Pumpkin Spice – this can be store-bought, but I like to make my own with cinnamon, nutmeg, ginger, and allspice.
