This easy make-ahead breakfast is one of my favorite healthy breakfast ideas. Get your clean mason jars ready and that favorite milk for your meal prep. Each jar will make a single serving.
What do you need?
- Pumpkin Puree – can you have pumpkin spice overnight oats without pumpkin? Do not get pumpkin pie filing as it is way too sweet.
- Almond Milk – this is a favorite milk of mine to use but other non-dairy milk flavors work too.
- Rolled Oats – you can use either regular or quick oats
- Walnuts – for the crunchy texture
- Honey – for a hint of sweetness
- Pumpkin Spice – this can be store-bought, but I like to make my own with cinnamon, nutmeg, ginger, and allspice.
Preparation Instructions:
Mix all ingredients together until well combined. Spoon into each mason jar. Place lids on and refrigerate overnight. Garnish with additional honey and walnuts if desired and enjoy!
