Weight Watcher Friendly Jerk Chicken Soup

If you have been over-indulging this holiday season, this is a great recipe to add into your meal plan over the next week or two. This Weight Watcher Friendly Jerk Chicken Soup is perfect for being low in points and yet, high in flavor. Even better? You make it in the Instant Pot!

Weight Watcher Friendly Jerk Chicken Soup

meal plan month one
You will need:
1/4 tsp red pepper flakes
1/2 tsp ground allspice
1/4 tsp ground cayenne pepper
1/2 tsp ground ginger
1/2 tsp cracked black pepper
2 tbsp. minced garlic
2 lbs. skinless chicken breast cut into chunks
1 large yellow onion – skin removed, chopped
1 can of diced green chilies
2 can of fire roasted tomatoes
2 can of black beans– drained and rinsed
6 cups of fat-free chicken broth
2 limes- juiced
2 tbsp. of cilantro
 
Directions:
In a small bowl add all of your spices the, cayenne pepper, ginger, garlic salt, red pepper flakes, and pepper and mix the spices together.
Prepare your chicken and place them in a large Ziploc bag.
Add your spices to the chicken, shake to coat.
Place in your refrigerator for 2 hours.

Now add the seasoned chicken, garlic, onion, tomatoes, black beans, lime juice, and chicken broth to the Instant Pot.

Stir to combine.
Place the lid on the Instant Pot and close to seal.
Close the vent on your Instant Pot to seal.
Set your Instant Pot to manual, for 15 minutes.
Let the Instant Pot do a natural release.
Garnish with fresh chopped cilantro.
