Weight Watcher Friendly Jerk Chicken Soup
If you have been over-indulging this holiday season, this is a great recipe to add into your meal plan over the next week or two.
Ingredients
- 1/4 tsp red pepper flakes
- 1/2 tsp ground allspice
- 1/4 tsp ground cayenne pepper
- 1/2 tsp ground ginger
- 1/2 tsp cracked black pepper
- 2 tbsp. minced garlic
- 2 lbs skinless chicken breast cut into chunks
- 1 large yellow onion – skin removed, chopped
- 1 can of diced green chilies
- 2 can of fire roasted tomatoes
- 2 can of black beans– drained and rinsed
- 6 cups of fat-free chicken broth
- 2 limes, juiced
- 2 tbsp of cilantro
Instructions
- In a small bowl add all of your spices the, cayenne pepper, ginger, garlic salt, red pepper flakes, and pepper and mix the spices together.
- Prepare your chicken and place them in a large Ziploc bag.
- Add your spices to the chicken, shake to coat.
- Place in your refrigerator for 2 hours.
- Now add the seasoned chicken, garlic, onion, tomatoes, black beans, lime juice, and chicken broth to the Instant Pot.
- Stir to combine.
- Place the lid on the Instant Pot and close to seal.
- Close the vent on your Instant Pot to seal.
- Set your Instant Pot to manual for 15 minutes.
- Let the Instant Pot do a natural release.
- Garnish with fresh chopped cilantro.
