Spinach Salad With Hot Bacon Dressing Recipe

I have a husband who swears he hates anything that has vinegar in it…so shush, do not tell him but this is one of his favorites and, it does have vinegar! This meal is 12 Smart Points Per Serving
When you add sweet red onions, sliced hard boiled eggs, crispy chopped bacon and fresh baby spinach the flavors alone, help overpower the vinegar and you really can’t tell. Did I mention that bacon grease is used in the salad dressing? Winner!
Spinach Salad With Hot Bacon Dressing
Ingredients:
- a bag of baby spinach
- 3-4 peeled hard boiled eggs, quartered
- 4 – 5 slices cooked bacon, crumbled or diced
- half a red onion, sliced thin
- croutons, roughly a cup
That’s not the magic — the magic is in the hot dressing!
- 3-4 tbsp. bacon grease
- 2 slices bacon, crumbled
- 2 tbsp. sugar
- 2 tbsp. ketchup
- 1 tbsp. chopped onion
- 1 tbsp. red wine vinegar
- 1 tbsp. Worcestershire sauce
Place the bacon grease in the pan. Add all ingredients but the bacon, and 1 tsp corn starch. Bring it to a boil, then drop it to a simmer to let it thicken. (5 min or so). Fold in the bacon and quickly pour it over your spinach salad. Now you can rip into it like a monkey on a cupcake!
