  • 4 large zucchini, sliced into ¼ - ½ inch slices
  • 1 tbsp butter
  • 1 tbsp minced garlic
  • ¾ cup heavy cream
  • 4 oz cream cheese
  • 1 cup cheddar cheese sheds, divided
  • ¼ cup parmesan cheese
  • ½ cup mozzarella cheese shreds
  • 1 tsp onion powder
  • salt & pepper to taste


Preheat oven to 400 degrees and prepare a 13x9 baking dish with nonstick spray.

Place the sliced zucchini in a single layer on a towel or paper towel, sprinkle with salt on both sides and allow to sit for about 30 minutes.

Dry to zucchini with additional towels or paper towels and arrange them in rows in the prepared baking dish.

In a saucepan cook the garlic in the butter for about 1 minute.

Stir in the heavy cream, cream cheese, parmesan cheese, and ½ cup of cheddar cheese.

When the cheese is melted stir in the onion powder and salt & pepper.

Pour the mixture evenly over the rows of zucchini.

Top the sauce with the remaining ½ cup of cheddar cheese and the mozzarella cheese.

Bake for about 30 minutes until bubbly and browning on top.

Allow to sit and cool come before serving.
