This ham and egg cups recipe is so easy to make! This dish can be served for breakfast, lunch, or dinner. The best part about ham and eggs cups is that you can customize them with any ingredient you want to use. All of the ingredients are mixed in a bowl before they’re put into the muffin tin and baked until done.

Personally, we love these as appetizers or as part of the spread for a family brunch. They come in particularly handy over the busy holiday season.
What kind of ham is best?
We’ve used both ham and bacon in this recipe with great success. We recommend using a smoked ham for the best flavor. If you’re looking to save on calories, go ahead and use turkey ham or turkey bacon instead…but, um. no. It makes a huge difference in both the taste and texture in my opinion.
You can buy your ham in the packaged section of your grocery store but I think it comes out too thick – the trick to this dish is a nice thin slice of ham for each of the ham and egg cups.

My trick? Go to the deli part of your grocery store – pick out a smoked ham variety and have them slice it thin for you, while you wait. You only need 10 ham slices, and that means you will be saving money over getting your ham in that prepackaged section.
Eggs vs. Egg Whites
Feel free to make these cups with either eggs or egg whites.
I typically use egg whites in this ham and egg cups recipe because I feel like the ham is enough to give it flavor without having to add extra fat with whole eggs, but if you are not concerned about calories go ahead and use either – they taste great both ways.
Freshly shredded cheese is best
Yes, again, you can get the shredded cheese in a bag.
But, again, no.
You get so much more flavor and it melts so beautifully when you grate your own cheese – especially if you are using ham slices that have the rind on one side of them (which I always do). The texture is perfect for this ham and egg cups recipe.

Ham and Egg Cups Ingredients:
- 10 ham slices
- 1 Large onion, finely chopped
- 2 Cups cheddar cheese
- 1 Tbsp butter, melted
- 1 Tsp olive oil
- 8 Eggs
- 10 Cherry tomatoes, halved
- Salt to taste
- Parsley, as garnish
Directions to make Ham and Egg Cups:
Preheat your oven to 350F.
Prepare a muffin tray by spraying it with cooking spray.
In a medium-sized bowl mix the onion, cheddar cheese, butter, olive oil, eggs, and salt.
Place the slices of ham in the muffin tray so that they are resembling muffin liners.
Fill the ham slice muffin liners with the egg and cheese mix.
Bake for 20 minutes or until done.
Remove them from the oven, set them aside to cool down to room temperature before removing the cups from the tray.
Top the cups with cherry tomatoes and parsley.
