This Easy Chicken Teriyaki Stir Fry is very simple to make, requires only a handful of ingredients, and tastes delicious! It is high in protein, low carb, and full of veggies. It takes at most 15 minutes to make and will wow your family. My favorite thing? You can switch up the recipe to use whatever fresh veggies you have on hand. I have used sliced water chestnuts, bok choy, yellow onion, celery, and even bell peppers before!
Easy Chicken Teriyaki Stir Fry
This takes me back to childhood. My mom would make chicken stir fry in her red electric wok. I can still see it on the counter, clashing with the olive green kitchen appliances and flooring. The chicken was pushed up the sides while the assorted veggies were cooking, right before she added the sauce.
I swear it took longer to slice and dice the veggies than it did to cook them. We all had a task, from peeling carrots to pulling apart broccoli florets. Mom also added diced onion, zucchini sticks, red bell pepper strips, and sliced mushrooms to this recipe. As I said, it is easy to customize.
My tip for Easy Chicken Teriyaki Stir Fry? When you buy the boneless skinless chicken breast, have the meat counter of your grocery store dice it into one-inch chunks for you. They can do it for no additional cost, and wrap it back up into the cute little plastic film-covered styrofoam trays for you to bring home. I hate cutting up raw meat and this time saver keeps that slimy feel off of my fingers.
This meal will serve four people, one more person for each cup of raw vegetables you add to the mix. Serve it over rice and you have a meal fit for royalty.
You will need:
- 1 lb boneless, skinless chicken breast cut into 1 inch cubes
- salt and pepper to taste
- 2 tbsp olive oil divided
- 2 cups broccoli florets
- 1/2 cup baby carrots cut into 1 inch pieces
- 2 tsp minced ginger
- 2 garlic cloves minced
- 2 tbsp soy sauce
- 1 tbsp honey
Instructions for Easy Chicken Teriyaki Stir Fry
Add one tablespoon of olive oil to a large skillet or wok and heat over medium-high heat.
Add ginger and garlic and cook for an additional minute.
Add chicken (in batches if necessary) and season with salt and pepper. Cook for 3 to 5 minutes or until cooked through.
Reduce heat to medium and add broccoli and carrots and cook, stirring occasionally, just until tender.
In a separate bowl, mix soy sauce and honey and pour the sauce over chicken and vegetables. Mix all together with a cooking spatula.
Serve the Easy Chicken Teriyaki Stir Fry hot or warm, with rice or noodles. Don’t be afraid to put this over spaghetti – it originally came from the Chinese, not the Italians!
