
Dr Seuss Red Fish Blue Fish Pancakes!

Dr Seuss’ birthday is just around the corner — and what better way to celebrate than makeing Red Fish Blue Fish Pancakes?

Pancakes:
- 2 cups pancake mix, prepared
- Wilton Icing Color, red
- Whipped topping
- Swedish Fish
Syrup:
- 1 packet blue Kool Aid
- 1 cup sugar
- ½ cup water
Heat griddle to 300°. Prepare pancake mix as directed. Tint batter with Wilton Icing Color until batter reaches the desired shade. Pour by ¼ cup onto griddle. Cook until center is set, flip and cook for an additional 30 seconds (this will eliminate browning).
Make syrup by heating Kool Aid, sugar, and water over medium heat. Cook for approximately 8 minutes, until mixture begins to reduce and slightly thickens. It will thicken as it cools..
When pancakes are cool enough to handle, cut with a fish shaped cookie cutter. Discard scraps. Spread half of the fish shapes with a big dollup of whipped cream. Top with remaining pancakes. Top with syrup, additional whipped cream, and Swedish fish.
