
Easy Fruit Tart

This is a great Easy Fruit Tart recipe for a kid who can’t have most kinds of fresh fruit – we almost celebrate the ones she can it with it! Red grapes (how weird is it that she can’t eat green ones?), canned oranges, blueberries… she does have to pick off the strawberries though, but they are there for me, LOL!

You start with a sugar cookie crust — you can make any recipe you wish, or simply use a packaged mix.
Cream Cheese Filling:
- 1 package (8 oz) cream cheese, softened
- 1/3 cup sugar
- 1/2 teaspoon vanilla
Beat cream cheese, sugar and vanilla with electric mixer on medium speed until fluffy. Spread mixture over cooled crust. Arrange fruit over cream cheese. Stir 1/2 cup of apple jelly (I use my homemade) until smooth; spoon or brush over fruit. Refrigerate until chilled, at least 1 hour.
