Try Our Butterbeer Spiced Knibble Cookies

This is for all my Harry Potter fans! Being in recovery mode for most of this year means that I haven’t been able to travel a few places or enjoy a few fun things that I would normally enjoy. I LOVE Butterbeer and swear that it must be my favorite thing about visiting the wonderful world of Harry Potter inside Universal Studios.
These Butterbeer Spiced Knibble Cookies are just the ticket to alleviate my craving and help me enjoy a tasty snack.
You will need:
2 1/4 C flour
1 tsp baking soda
1 tsp kosher salt
1/2
1 C unsalted sweet cream butter, softened
3/4 C sugar
3/4 C light brown sugar
1 tsp vanilla extract
2 eggs
1 C butterscotch chips
1/4 C powder sugar, for dusting after the cookies are baked
1 cookie sheet fitted with parchment paper
Directions:
- Preheat your oven to 350 degrees
- In a large bowl, combine the flour, baking soda and salt and mix with a whisk till combined
- Using a standing mixer, cream together the butter, sugar, brown sugar and vanilla until creamy.
- Add eggs, one at a time, beating well after each egg
- Gradually mix in flour mixture.
- Stir in the butterscotch chips
- Using a small ice cream scoop, scoop out some dough and roll into a ball
- Place onto cookie sheet and repeat with 11 more dough balls
- Bake for 10 minutes
- Using a shaker, add in the powder sugar and shake over the cookies
