Tomato Bisque Soup with Basil – Only 2 Weight Watcher Smart Points

I am so excited! I just planted my tomatoes in my summer garden and am looking forward to all the great recipes I can make with those heirloom ‘maters! This particular soup came to mind and we just had to have it — Tomato Bisque Soup with Basil. It’s heaven in a bowl — you only need your friend the spoon to share it with. It’s only 3 Smart Points Per Serving!
Tomato Bisque Soup with Basil
 
You will need:
  • 4 cans fire roasted tomatoes
     
  • 4 tbsp. dried onion powder
    meal plan month one
  • 1 tbsp. of diced garlic in a jar
  • 2 tsp. garlic powder
  • 2 tbsp. of minced basil
  • 1 tbsp. unsalted butter
  • 4 cups vegetable broth
  • Parmesan cheese
DIRECTIONS
Add your tomatoes and diced garlic into a blender
Puree for 2 minutes until smooth
Add your tomatoes, broth, dried onion, garlic powder, and butter in large stock pot.
Bring to a boil then reduce to low
Cook on low for 30 minutes.
Add minced basil leaves, blend with stick blender until.
Garnish with parmesan cheese
Yield: 6 servings
