Slow Cooker Recipes You Have To Try This Summer

Summer is time or fun and relaxing in the sun, why spend hours cooking dinner over a hot stove when it’s already 100 degrees outside? Save yourself the heatstroke and start using your crockpot. You can make some amazing meals in a slow cooker and the best part is there is usually a lot of food left over so you won’t have to cook the next day.
Allow yourself to have fun this summer, here are some slow cooker recipes you have to try this summer.
Vegetarian Chili
Now even if you aren’t a vegetarian this recipe is amazing and delicious!
What you will need:
- 1 sweet potato, peeled and cut into medium sized squares
- 4 garlic cloves chopped
- 1 red onion chopped
- 1 green bell pepper chopped
- 2 tbsp chili powder
- 1 tbsp ground cumin
- 3 tsp unsweetened cocoa powder
- About 1 tsp salt and pepper
- 1 can of roasted diced tomatoes
- 1 can of kidney beans, drained
- 1 can of black beans, drained
In your slow cooker you are going to put in the sweet potato, garlic, onions, bell pepper, chili powder, cumin, unsweetened cocoa powder, salt, pepper, can of diced tomatoes (including the juice), kidney beans, and black beans, along with 1 cup of water. Cover and cook on low for 7-8 hours or on high 4-5 hours depending on when you are planning to eat. The chili should thicken and the sweet potatoes should be tender. You can serve with tortilla chips, sour cream, or whatever you’d like.
Root Beer Pulled Pork
One of the best slow cooker recipes ever! In my opinion and it’s simple and tastes great.
What you will need:
- 1 12 oz bottle or can of root beer
- 4 cloves of garlic chopped
- 1 4 pound pork shoulder
- 1 bottle of liquid smoke flavoring
Put your pork into the slow cooker and pour over the bottle or can of root beer, liquid smoke, and add the garlic on top. Cook on low for 8-10 hours, once done remove pork into a bowl, drain the liquid, and then shred the pork with two forks. Viola! a very simple delicious dinner, serve however you’d like.
Lasagna
Lasagna is by far a staple for many and this slow cooker recipe just makes it easier for you to enjoy.
What you will need:
- 1 onion chopped
- 1 can of tomato sauce
- 1 can of tomato paste
- 2 tsp minced garlic
- 1 tsp dried oregano
- 1 1/2 tsp salt
- 1 package of lasagna noodles
- 12 oz of cottage cheese
- 1/2 cup grated Parmesan
- 16 oz shredded mozzarella
- 1 pound of ground beef
Cook the ground beef, garlic, and onion over medium heat in a skillet, until brown. Add the tomato paste, tomato sauce, oregano, and salt. Stir until it is all mixed well and cook until it is heated through. After the sauce is done you are going to mix together all the cheeses in a large bowl and start layering the slow cooker, starting with the meat mixture on the bottom then add a layer of uncooked lasagna noodles (you can break the noodles if needed to fit) next put a layer of the cheese mixture on top of the noodles. Repeat this until the slow cooker is full. Cover and cook on low for 4-6 hours.
Slow cookers are the best, especially when it comes to summer. You avoid making the house even hotter and you can just enjoy relaxing all day without having to worry about cooking dinner. Throw everything your slow cooker in the morning and by dinner time it’s done! these are just a few of the abundant amount of slow cooker recipes you have to try this summer.
