Instant Pot Red Beans and Rice Dinner

I simply adore Cajun food and this Instant Pot Red Beans and Rice Dinner is a quick fix for my cravings! In just 28 minutes I can hit that steam release and wipe the drool off of the corner of my mouth as I get ready to plate the total yumminess that this dish is! 12 Smart Points
You will need:
1 onion (diced)
1 bell pepper (diced)
3 celery stalks (diced)
3 garlic cloves (minced)
1 lb dry red kidney beans
1 tsp salt (or more to taste)
1/2 tsp black pepper
1 tsp hot sauce
1 tsp fresh thyme(or ½ tsp dried thyme)
2 bay leaves
7 C water
1 lb Cajun sausage (thinly sliced)
10 C cooked rice
Directions:
Add ingredients (except for sausage and rice to the Instant Pot).
Place the lid on.
Lock the lid.
Set to manual high pressure (for 28 minutes)
At 28 minutes, use the quick release method (release the valve).
Wait until the pin falls.
Remove the lid.
Run the lid under cold water.
Set aside.
Add sausage.
Put the lid on, locking it.
On manual setting set for 15 minutes high pressure,
Allow the Instant Pot to release naturally this time.
This may take as long as 26 minutes for the pin to drop on its own.
Allow this to sit with the lid off to thicken the broth.
Serve over cooked rice
