Easy Chicken Alfredo Stuffed Shells

You can either make your Alfredo sauce from scratch or use a jar of store-bought sauce. I like to use Classico Four Cheese Alfredo Sauce, but any Alfredo sauce will work.

We like to switch it up a bit and add either steamed broccoli florets or cooked spinach to the chicken mixture to stuff the shells. That adds not only color but a little extra nutrition. If you’re using broccoli, chop it into small bite-sized pieces. If you’re using spinach, cook it until wilted and then chop it up.

  • Jumbo or Large dried pasta shells – these are on sale all the time for roughly a buck. Dried pasta keeps a long time so it is a great item to have on hand.
  • Ricotta cheese – you can use cottage cheese in a pinch, but I think Ricotta makes for a richer and creamier result
  • 1 egg – I like to use Grade A Large eggs.
  • Basil – I love using fresh basil in this recipe, but you could also use dried basil.
  • Oregano – I think oregano really adds a depth of flavor to this dish, but you could omit it if you don’t have any on hand.
  • Parmesan cheese – I like to use freshly grated Parmesan cheese, but you could also use the kind that comes in a can.
  • Chicken breast, cooked & shredded – this makes for good use of leftovers or a great way to utilize rotisserie chicken.
  • Alfredo sauce – like I said earlier, you can either make your Alfredo sauce from scratch or use a jar of store-bought sauce.
  • Mozzarella cheese shreds – I like to use the bagged shredded Mozzarella cheese, but you could also shred your own.
  • Parsley for garnish – dried or fresh, it doesn’t matter.

How to make easy chicken alfredo stuffed shells

Preheat the oven to 350 degrees and lightly spray a baking dish with nonstick spray.

Cook shells per package directions, drain and set them aside. This step can be done in advance, just keep them in a covered bowl until you are ready to fill them. I like to run them under hot water first to make them more pliable.

In a large bowl mix the filling ingredients until they are well combined.

Evenly spread one cup of alfredo sauce in the bottom of a 9 x 13-inch baking dish.

Stuff each shell with the chicken mixture and place them on top of the sauce in the dish. To stuff the shells, hold each shell in your hand and use a spoon to scoop about two tablespoons of the mixture into each shell. Once they are all stuffed, place them over the Alfredo sauce at the bottom of your baking dish.

Pour the remaining one cup of sauce over the shells and top with mozzarella cheese

Bake for 30 minutes.

Garnish with parsley and serve immediately.

Expert Tips

If you don’t have Ricotta cheese, you can substitute cottage cheese. Just drain it first by putting it in a colander and pressing down on it with the back of a spoon.

You could also use ground chicken in this recipe. Just cook it until it’s no longer pink and then proceed with the recipe as directed.
