Dry Rub Ribs Made in the Instant Pot – 6 Weight Watcher Smart Points

Ribs are a great feature of summer but the weather doesn’t always co-operate! We figured we needed a little “fake sunshine” after a weekend of cloudy and wet days, with more in the forecast for the week. Our Dry Rub Ribs Made in the Instant Pot were just the ticket to make a smile come to our faces. I am sure you will love these too – they fall off of the bone, melt in your mouth and are so darned tasty that you can serve them with a simple side like corn on the cob or a tossed salad. Only 6 Smart Points!
Dry Rub Ribs Made in the Instant Pot

Instant Pot Dry Rub Ribs

You will need:
1 rack of baby back pork ribs
1/4 C brown sugar (packed)
1 tsp dried oregano
1 tsp salt
1 tsp white pepper
1 tsp thyme
1 tsp garlic powder
1 tsp onion powder
1 tsp cayenne pepper
1 tsp paprika
1 tsp dried basil
1 C Chicken broth

To make your Dry Rub Ribs

Remove the lining from the bottom side of the ribs.
Combine the brown sugar, Dried Oregano, White pepper, paprika, salt, Thyme, garlic powder, onion powder, basil, and cayenne pepper in a small dish.
Stir to mix all of the seasonings together.

Rub this all over the ribs.(both sides)
Put the metal rack in your pressure cooker, after pouring in the chicken broth.
Carefully place your seasoned ribs inside the pot.
Stand the ribs on their side.
Carefully fitting the ribs around the inside of the pot.
Secure the lid, ensure the vent is closed.
Press the Meat button, setting for 25 minutes.
Allowing the pressure to naturally release for 10 minutes.
Next quick release the all of the way.
Carefully remove the ribs from the pressure cooker.
Transfer the ribs to a parchment lined baking sheet.
Place the baking sheet under the broiler( on high) for 5 minutes. (Check often so they don’t burn)

    1. Stand the ribs on their side.

    1. Next carefully pour in chicken broth
    1. Keep the liquid away from the ribs not to remove any of the seasonings on the ribs.
    1. Secure the lid, ensure the vent is closed.
    1. Press the Meat button, setting for 25 minutes.
    1. Allowing the pressure to naturally release for 10 minutes.
    1. Next quick release the all of the way.
    1. Carefully remove the ribs from the pressure cooker.
    1. Transfer the ribs to a parchment lined baking sheet.
