Cooking Class 101: Parmesan Garlic Risotto Recipe – 5 Weight Watcher Smart Points

How To Make Risotto

When you are tired of traditional potatoes, rice, and pasta -Risotto is such a versatile side to dish to prepare.  Like pasta or rice, it has a mild flavor and soft texture, to lend itself well to infusing with a multitude of flavors and seasonings. This recipe is flavored with fresh garlic and Parmesan cheese. You could easily add in your favorite fresh or dried herbs, or other liquids like beef broth, beer, or other wines to create your ideal  flavor combination.

Parmesan Garlic Risotto

5 Smart Points Per Serving

You will need:

  • 1 cup dry Arborio rice
  • ¾  cup white wine
  • 1/3 cup grated parmesan
  • 2 cups chicken broth
  • ½ large onion, finely diced
  • 1 Tbsp. extra virgin olive oil
  • 2 Tbsp. butter
  • 2 cloves garlic, crushed

Directions:

In a medium saucepan over medium-high heat combine onion, butter, and olive oil, brown for 3-4 minutes until onions start to become translucent.

Add rice and cook an additional 3 minutes.

Reduce heat to medium. Add garlic. Stir in white wine and half the broth, continue cooking until all liquid has been absorbed. Add remaining broth, continue stirring until that liquid has been absorbed almost completely. Remove from heat and stir in grated Parmesan, salt, and pepper to taste.

Serve immediately.
