It’s hard to keep track of everything that little people shouldn’t eat, simply because it’s a danger to them! Popcorn is another one of those things, and this Child Friendly Caramel Corn lets you make a fun treat for them that isn’t a danger of them choking on. I got this recipe from my scrappin’ buddy Miss Tracy – she is totally known for it!

Child Friendly Caramel Corn

Ingredients:
- 2 bags puffed corn
- 1 1/2 C butter (do NOT substitute for margarine!)
- 3 C brown sugar
- 3/4 C light corn syrup
- 1 tsp salt
- 3/4 tsp baking soda
Directions:
Set your oven to 250.
Put the puffed corn in a HUGE pan and in the oven while making the caramel sauce. Over medium heat, put the butter, brown sugar, corn syrup and salt. Bring to a boil and then boil about 5 minutes. Add the baking soda and watch it get all foamy on you! Pour this mix over the puffed corn and stir gently. Bake it for 45-50 minutes, stirring every 10 minutes or so.
Now… you may or may not want to let it cool before ripping into it like a monkey on a cupcake — I’m just sayin’.
