Toffee Cookie Bars

Sometimes you like something sweet but don’t want it “over the top”. These Toffee Cookie Bars are the perfect answer for that — and are a sure crowd pleaser for any party!

 Toffee Cookie Bars

Ingredients:

  • 2 Cups flour
  • 1 Cup brown sugar
  • 1 Cup butter
  • 1 egg yolk
  • 1 teaspoon vanilla extract
  • 6 chocolate candy bars, lightly chopped*
  • 1 cup coarsely chopped walnuts

Directions:

In a large bowl, combine flour and sugar. Cut in the butter. In a separate bowl, beat the egg yolk and add the vanilla. Add the yolk mixture to the crumb mixture, stirring until the dough holds together.

Press into your jelly roll pan (15×20″ pan). Bake for 15-20 minutes at 350 until lightly browned.

Remove from oven and put the candy bars over the hot cookies. Let it stand until the chocolate is slightly melted and then spread it over the cookies. Quickly sprinkle with the chopped walnuts and cool completely before cutting into bars.

**I used to use Hershey Bars but they no longer contain cocoa so I use a more up-scale chocolate. Check it out for yourself, you will see PGPR on their label of ingredients.
