Cajun Pasta Mardi Gras Recipe

I like comfort foods and pasta is high on my list of them. This is a petty easy to make, yet complex and impressive dish to serve during this great month of Mardi Gras! The Cajun flavors and delicacies in this dish will treat the taste buds and find its way into your permanent recipe box. – 28 Smart Points Per Serving

Ingredients:
1 box of Penne pasta
4 skinless / boneless Chicken breast
1 pound of medium-sized shrimp Shrimp
2 packages Cajun smoked sausage
1 large Purple Onion
2 Cans of fire roasted tomatoes
Cajun Spice
Directions:
Prepare your pasta as directed. Season your chicken with your Cajun spice evenly on all sides. Set to the side. Season your shrimp with your Cajun spice and then set to the side.
Chop your onions and set to the side. Slice your Cajun sausage into 1 inch rounds and then set to the side.

Place your chicken into a sauté pan and cook until 3/4 of the way done
Remove your chicken and slice into 1-2 inch slices.
Add your chicken back to the sauté pan and add your onions.
Cook for about 5-7 minutes until the onions become tender.
Add your Cajun sausage, and shrimp to your pan with your chicken and onion cook until your shrimp becomes fully cooked.
Begin to add your cooked pasta and cans of fire roasted tomatoes then lightly stir to combine all ingredients, then rip into to like a monkey on a cupcake!
