Chicken Dijonnaise is a classic French dish that is perfect for a quick and easy dinner. Our recipe includes dijon mustard, chicken, and creamy sauce – it’s sure to please everyone in your family!
What is Chicken Dijonnaise?
Considered French “Country” cooking, it makes use of what you have – or what they had. Having members of the family that own a chicken farm in Southern Illinois, I know that egg layers aren’t necessarily the best for roasting. They tend to get a lot tougher as they age, but true farmers make use of everything they can.
Tough cuts of meat are slowly cooked, marinated, etc to become more tender and layers of flavors are created to distract the pallet. What better way is there than to use wine, cream, and herbs to do it? Leave it to the French, LOL!
I need you to know that this is NOT dijon mustard added to mayonnaise. There is absolutely no mayo in this recipe.
Chicken Dijonnaise is a French dish that typically includes chicken, dijon mustard, and a creamy sauce. Our version is a quick and easy dinner option that is sure to please everyone in your family.
Dijon mustard is a type of mustard that originated in the town of Dijon, France. It is usually made from a mixture of brown and white mustard seeds, vinegar, wine, and spices. The taste of Dijon mustard is sharp and tangy with a slightly sweet flavor. You can actually get it at your Local Dollar Tree store and save a few pennies.
Reasons You Will Love This Dish
Our Chicken Dijonnaise recipe is easy to follow and only takes minutes to prepare. It is flavorful, versatile, and sure to please everyone in your family! It is a versatile dish that can be served with rice, potatoes, egg noodles, or vegetables to create that complete meal.
What to Serve with This Recipe
This Chicken Dijonnaise recipe goes great with a simple side salad or steamed vegetables.
For the Salad: We recommend using a mix of greens such as spinach, arugula, and kale. Add in some cherry tomatoes, croutons, and your favorite salad dressing.
For the Vegetables: Try steaming broccoli, carrots, and green beans. You can also roast them in the oven with a little bit of olive oil and sea salt.
Do You Need to Wine?
Our version is wineless – it helps keep the cost of the dish down. If you want that little oomph that white wine could give it – add a half cup of your favorite white to the sauce. We prefer a nice Chardonnay.
Is Chicken Dijonnaise Healthy?
OK. You read already that this has a cream sauce. That uses heavy cream. The rest of the ingredients are pretty healthy: chicken, mustard, and chicken stock. Add a salad or veggie on the side and you make it even more healthy.
Working with Mustard: What You Need to Know
When working with mustard, be sure to taste as you go. Mustard is very strong and can easily overpower a dish if you use too much. Start with a small amount and add more to taste.
The other big thing? Never let a sauce that has dijon mustard in it boil. Doing so will make the mustard taste bitter.
Now that you know all there is to know about Chicken Dijonnaise, it’s time to get cooking!
Ingredients for our Chicken Dijonaise Recipe
- Boneless skinless chicken breasts, sliced thin – you could use chicken thighs for this if you want to
- Flour – this will help thicken your sauce
- Black Pepper – you could use white pepper if you don’t like black specks in your sauce
- Butter or olive oil – butter adds more flavor
- Green spring onion – green onion is subtle enough and also has a nice pop of color
- Heavy whipping cream – if you want to lighten it up, you could use evaporated milk
- Dijon mustard – of course! You could use a grainy mustard or even a honey mustard
- Chicken broth or chicken stock – we like to use the Better Than Bouillon paste because it is more concentrated and make our own broth

How to Store Leftovers
Chicken Dijonnaise can be stored in an airtight container in the fridge for 3-4 days. We do not recommend freezing it as the sauce may separate when reheated.
Reheating Instructions
To reheat, simply place chicken dijon in a skillet over medium heat until warm throughout. You could also reheat it in the microwave, but be sure to do so in 30-second intervals so as to not overcook the chicken.
