The Best Copycat Qdoba Queso Recipe Cheese Dip
We have hunted the internet to find a version we could love that was as good as what we found at Qdoba Mexican Grill or other Mexican restaurants. While we love fast food restaurants for gems like the Qdoba menu, we know that making our favorites in our own home can be done for a fraction of the cost.
We finally landed on a Qdoba queso recipe that is super easy to make and only requires a few ingredients. You can have the best queso dip in just minutes; it will be devoured before you know it!
What do you use Qdoba’s queso for?
While Qdoba’s queso is amazing, you can use it in many ways. We’ve compiled a list of our favorite five ways to use this copycat Qdoba queso recipe.
Appetizer
Serve this queso dip with tortilla chips as an appetizer at your next party. It’s always a hit and perfect for that game day event or holiday party.
Main dish
Queso is the perfect topping for any Mexican-inspired dish. Try it on tacos, enchiladas, burritos, burrito bowls, or just plain rice and beans. We think it is perfect over a taco salad with black beans and next to the sour cream and guacamole. It has more flavor than pico de gallo.

Snack
Queso is also great as a snack. Dip some fresh veggies or pretzels in it, or just eat it straight up with a spoon!
Quesadillas
One of our favorite ways to use queso is in quesadillas. Simply spread some on a tortilla, add your favorite fillings, and grill until golden and crispy. So good!
Queso fundido
Queso fundido is a delicious Mexican dish similar to queso dip, with grilled meats and veggies. It’s the perfect way to use up any leftover queso (if you have any!).

Qdoba 3 Cheese Queso
That is what my teen calls this – and for a pretty simple reason: we use three different kinds of cheese to make it. This Qdoba 3 Cheese Queso is, in fact, very close to the Qdoba queso recipe. While none seem like traditional Mexican cheeses, they blend and work wonderfully to create the best queso dip recipe we have made. We use real cheese, not cheese food like Velveeta in this not-so top secret recipe
