Supreme Pizza Soup
My daughter has been on a pizza kick lately. Seriously! She wants Pizza. Pizza Pasta. English Muffin Pizza. Pizza Biscuit Roll-Ups and now, a request for Pizza Soup. I consulted with my mother on this one as I recalled us making it once or twice at the restaurant and wanted a simpler, easier version. Below is what we came up with.
Start with what do you like ON your pizza normally! We make a variety of different kinds like:
- BBQ Chicken
- Cheeseburger
- Meat Lovers
- Margherita
- Veggie Tales
- Classic Pepperoni
You get the idea…We decided on Italian Sausage, Pepperoni, Mozzarella, and Mushrooms…all items that I had cooked off and in the freezer! Of course, I conferred with the local pizza gourmand.
You will need:
- 1 can of spaghetti sauce
- 1 brick of cream cheese
- 1 cup of milk
- ½ cup diced pepperoni
- ½ cup Italian sausage, cooked
- ½ cup diced onions, sauteed
- ½ cup diced green peppers, sauteed
- ½ cup fresh mushroom slices
- 1 cup shredded mozzarella
Directions :
Pop these three things into your slow cooker on low for 2-3 hours.
- 1 can of spaghetti sauce
- 1 brick of cream cheese
- 1 cup of milk
Give it a quick stir and add the pepperoni, sausage, onion, green pepper, mushrooms, and mozzarella. Let it cook on low for another 30-60 minutes.
To serve, simply it with some more Mozzarella and a sprinkling of Italian Seasoning.
Making Supreme Pizza Soup in advance
I have been doing a lot of canning and this simple recipe makes it very easy to whip up a batch of this soup any time you wish to! All of the meats and veggies are ready to go, is simply dropped into the soup and warmed through.
Pizza in a Jar
3 lbs sausage (I bought the cheapest, lol), cooked, crumbled & drained
2 small packages of sliced pepperoni
2 LG onions
2 LG green bell pepper
2 LG ham steaks (your choice of other ham)
3 small or 1 LG can sliced black olives
3 small cans of sliced mushrooms
Tomato or pizza sauce (I use tomato sauce)
Place pepperoni around inside of jars, add approximately 1/2 cup. Add the following in layers: onions, pepper, ham, olives & mushrooms. Slide more pepperoni down the sides & finish filling jars to the lower rim with sausage. Don’t worry about overfilling the jars – pack it tight as there will be shrinkage.
Add approximately 2 tbsp tomato sauce. Clean rims, add lids & process according to meat times. Mine are 1 1/2 pint (yield 8 jars), so I processed for 80 mins on 10 lb pressure.
When ready to make pizza just brush the crust with tomato sauce & since I don’t have pizza sauce sprinkle a little of my favorite spices on it. I drained the jar contents through cheesecloth, poured in a bowl, separated the pepperoni to 1 side, added the contents to the crust, placed the pepperoni on top & added my favorite cheese & baked 20 mins at 400 degrees.
Notes: You can totally tweak the actual items added to the pizza in a jar – this is just what we like. If you are canning them just for making soup – make the pepperoni the mini pepperoni. It is better than taking the slices and cutting them into 4-6 pieces and will look better in your supreme pizza soup.
