I LOVE spanikopita, but don’t always like making the large pan of it. This is simple to make and brings that yummy Greek flavored goodness to you in smaller, elegant bites. Only 2 Smart Points Per Serving!
You will need:
Philo Shells
Frozen Spinach
1 Egg
8 oz Feta Cheese
2 Tbsp soft butter
Place the shells in a mini muffin tin
Mix all the other items together…
Spoon it into the philo cups
Bake at 375 for 20 minutes.
Now, rip into them like a monkey on a cupcake!
