Pumpkin Rice Krispy Treats

Fall means all sorts of great things; the crisp fall air, the smell of bonfires, and lovingly decorated yards for the season. It also means great treats – as school is back in sesssion, scout meetings have started back up, lunches needed to be packed and so much more is on our busy plates. It can be fun to have a seasonal treat, that you get the littles to help you make, and it has nothing to do with pumpkin spice. These Pumpkin Rice Krispy Treats are perfect as they are very low risk for allergies and super easy to make!

Pumpkin Rice Krispy Treats

This recipe makes approximately 20 2″-3″ pumpkins, usually enough for an entire class if you are the treat bringer! They whip into shape pretty fast and are something that even the littles can help you make.

You will need:
6 C. Rice Krispie cereal
10 oz mini marshmallows
3 tbsp. butter, cut into chunks
Non-stick cooking spray
Cookie scoop
20 Mini Pretzel Sticks
Directions:
Line 2 baking sheets with wax paper.
Add the mini marshmallows and butter to a large saucepan or dutch oven and heat on low/medium heat, stirring occasionally.
Once the mixture is about 1/2 melted add in several drops of the orange food coloring and stir to combine.

Fold in the Rice Krispie cereal until it is completely coated.
Let the Rice Krispie Mixture set for a few minutes to cool off AND thicken – if you try rolling into balls immediately, they will not stick. Trust me.
Use the cookie scoop to scoop the Rice Krispie mixture into 2″ scoops and place on the prepared the baking sheet.
Spray your hands with non-stick cooking spray and gently roll the Rice Krispies into balls using your hands and place back on the baking sheet.
Let them set a few minutes and gently press a small pretzel stick into the top for the stem and give each pumpkin a candy leaf.
Repeat with all pumpkins. Soon you will have a batch of drool worthy treats to share!
