Heuvos Rancheros: Not Just For Breakfast

This was something that we used to feature at our restaurant, on Sunday mornings as a special, at least once a month. Keep in mind that we had an AMAZING Hispanic lady working for us who taught us “real” salsa, enchilada sauce and Mexican rice. She was a real gem!

So, here it is, in a nutshell. First, you need tortillas…”warm” them or “grill” them on the stove burner. Yes, you read correctly. Hot burner, place tortilla.

Flip it after 15 seconds or so…
Then pop it onto a plate!

Spread some warm refried beans over it…

Then add some freshly cooked chorizo (slightly spicy Mexican sausage)

Now, place two fresh fried eggs on top. We prefer over medium…but it is your choice.

Add some grated cheddar cheese…quickly. The heat of everything helps melt the cheese. If not, you can zap for about 15-20 seconds in the microwave.

Now, top with some fresh salsa!

You are now ready to rip into it like a Monkey on a cupcake!

Ingredients

  • 6 - 8 tortillas
