You can get little people to try things when they are a part of creating it AND they see that a lot of the things they like are inside it. It really takes so few ingredients that you can feed a family for practical pennies! I stock up on the Tomato soup when HyVee has it on sale for $0.49 a can, onions are always a couple of pennies, and instant rice is dirt cheap at Aldi.

Easy Peasy Spanish Rice Recipe

This recipe has only five ingredients. It can’t be simpler than that to make!

Easy Peasy Spanish Rice Ingredients:

  • 1 onion, minced
  • 1 # ground beef or turkey
  • 1 cup minute rice
  • 1 can tomato soup
  • 1 can water

How to make Easy Peasy Spanish Rice:

Start by sauteing that onion in a little butter, in the skillet

Add the ground meat and cook through.

Remove half of the meat/onion mix and save for another meal, another night. (maybe mix it with a can of refried beans for taco night or enchiladas?)

Add rice, soup, and water. Stir and simmer.

This is where you can zip it up a bit if you wish – I like to add a few drops of Tabasco, parsley flakes, and some garlic salt. When it is “thick” you can plate it up and add some freshly grated cheese to the top! Yum!

  • Optional: Shredded cheddar cheese

Instructions

  1. Saute onion in butter.
  2. Add the ground meat and cook through.

  4. Add rice, soup and water. Stir and simmer.
  5. Optional: add Tabasco, parsley flakes and some garlic salt.
  6. Stir, when it thickens, it is ready to be served.
  7. Top with shredded cheese.
