So, here it is, in a nutshell. First, you need tortillas…”warm” them or “grill” them on the stove burner. Yes, you read correctly. Hot burner, place tortilla.




Spread some warm refried beans over it…

Then add some freshly cooked chorizo (slightly spicy Mexican sausage)


Add some grated cheddar cheese…quickly. The heat of everything helps melt the cheese. If not, you can zap for about 15-20 seconds in the microwave.

Now, top with some fresh salsa!

Ingredients
- 6 - 8 tortillas
- 1 can refried beans
- Chorizo, cooked and crumbled
- Eggs, fried and over medium (or made to your preference)
- cheddar cheese, grated
- Salsa, fresh or jarred (your preference)
Instructions
- First, "warm” or “grill” tortillas on the stove burner. Yes, you read correctly. Hot burner, place tortilla.
- Flip it after 15 seconds or so
- Then pop it onto a plate!
- Spread some warm refried beans over it

- Now, place two fresh fried eggs on top. We prefer over medium…but it is your choice
- Add some grated cheddar cheese…quickly. The heat of everything helps melt the cheese. If not, you can zap for about 15-20 seconds in the microwave
- Now, top with some fresh salsa!
