Our Own Texas Caviar – 6 Weight Watcher Smart Points

This is one of those super healthy, veggie power packed treats that is great for an potluck or party. Texas Caviar lets you “eat the rainbow” and indulge in a serious protein punch as well with all the beans. We have to leave out the bell peppers because I have a food allergy but it really does add a little kick. Only 8 Smart Points Per Serving!

INGREDIENTS:
- 1/2 cup olive oil
- 1/4 cup sugar
- 1/3 cup white wine vinegar
- 1 tsp Cayenne pepper
- 1 tsp of chili powder
- 1/2 tsp of red chili flakes
- 1 tsp salt
- 1 pound Roma tomatoes, seeded and diced
- 1 15oz can black-eyed peas
- 1 15oz can black beans
- 1 11oz can sweet corn,
- 1 red onion, diced
- 1/2 cup diced green bell pepper
- 1/2 cup diced red bell pepper
- 1 bunch of chopped cilantro


DIRECTIONS:
In a large bowl, add the olive oil, sugar, white wine vinegar, chili powder, cayenne, red pepper flakes and salt
Whisk to combine.
Open all of your canned items and and drain the excess juice.
Dice your tomatoes into quarters and remove the seeds.
Now dice your tomatoes and peppers.
Add tomatoes, black-eyed peas, beans, corn, red onion, and bell peppers.
Stir to combine.
Chop your cilantro make sure to remove all stems are removed
Stir in cilantro.
Cover and chill at least 1 hour or overnight to blend flavors.
Serve chilled or at room temperature.

Yield: 6 - 8 servings
