Easy Peasy Sweet Potato Balls

This is a super easy, yet impressive treat for the holiday table. Did you know, that if you could pick only ONE vegetable, you should pick the sweet potato because it is so incredibly loaded with nutritional goodness? These sweet potato balls can be made ahead of time and really amaze people on a buffet!
OK, sweet potatoes rock nutritionally but this recipe might not be the healthiest. That is because sweet potatoes are good for you before we add all the other stuff to it, LOL! You can prep this recipe for 3 days BEFORE the celebration – just leave it chilling in that fridge.
Sweet Potato Balls
You will need:
1 (40 ounce) can sweet potatoes, drained
1/4 cup butter
salt to taste
3 cups crushed cornflakes cereal
3/4 cup real maple syrup
10 large marshmallows (Yes, I used clearance Halloween Ghosts…)
Directions
Drain sweet potatoes and put into your mixer. Let it mash the potatoes with butter (SO much better tasting than if you use margarine). Salt to taste. Hand pat mixture into ten 3-inch diameter balls. Roll in crushed corn flakes. Place balls in 9×12 pan, cover and chill.
Are you ready to bake?
Pour maple syrup evenly over all of the sweet potato balls. Bake for 25 minutes in the same oven as the turkey. Remove from oven put a marshmallow over each sweet potato ball and return the pan to the oven. Bake for 15 more minutes.
