Amazingly Easy Duncan Hines Red Velvet Pancakes Recipe

This Red Velvet Pancakes recipe of mine starts with an average-sized (15.25 oz) box of Duncan Hines Red Velvet Cake Mix and turns out an amazingly tasty treat! It doesn’t have to be saved for Valentine’s Day but can be whipped up any time for that special someone in your life, or even yourself!

While I haven’t found a decent Red Velvet Pancakes Boxed mix, this recipe of mine is the next best thing. Before you know it, your red velvet pancakes breakfast will be ready to dig into! I really needed this recipe idea after IHOP discontinued their Red Velvet Pancakes!

Isn’t it amazing how things are created out of necessity? I just crave these babies and hate the idea of going out and dropping five times the cost of the recipe on just one plate of red velvet pancakes.

Can you make red velvet pancakes with a cake mix?

You betcha – I played around a bit and came up with this simple adaptation to a Duncan Hines cake mix that works amazingly well!

Let’s talk about Red Velvet…

Why are Red Velvet treats so expensive?

Possibly because it has the word velvet in it. Though the frosting does typically contain cream cheese, which could make the frosting more expensive, hence making the cake more expensive. Most red velvet cake is just chocolate cake died red with cream cheese frosting, like I had encountered myself.

Supposedly, Red #40 is edible and safe, but research has shown that it does increase hyperactivity in some children, and at concentrations as high as those found in Red Velvet cake, I would question how safe it really is. My recommendation would be to opt for chocolate or vanilla flavors when you need a cake fix.

Why is my red velvet not red?

It’s not really a chocolate cake despite having cocoa in it, it’s sort of vanilla with a bit of cocoa. Chocolate cake is much nicer. Proper red velvet cake is made with white vinegar which reacts with the chocolate to give it it’s red color, not food coloring. The velvet is a reference to the velvety smooth texture of it.

Why does red velvet taste different?

Red velvet cake has an acidic taste that comes from the use of buttermilk and vinegar as well as the cream cheese in the frosting. The acidity is balanced out by the sweetness of the cake itself. It also has cocoa powder added to it for a mild chocolate flavoring. My recipe will bypass that vinegar and buttermilk with the use of red velvet extract.

That pretty much answered any question I had about it, LOL.

While I am sure the Duncan Hines Red Velvet Cake Mix has food coloring instead of that fancy red velvet extract, the end result of this red velvet pancakes recipe is still worth chowing down on.

Red Velvet Pancakes Recipe

You will need:

  • 1 Duncan Hines Red Velvet Cake Mix, prepared as directed
  • 1 Cup Flour
  •  ½ Cup Milk
  • 1 Cup Red Velvet M&M’s, crushed

Heat griddle to 300°.  Prepare cake mix as directed on box, adding 1 cup of flour and ½ cup milk to the mixture.  The mixture needs to be fairly thin, as these must cook quickly to avoid burning.  Pour ¼ cup batter onto the griddle.  Cook until edges bubble and start to dry out, then flip. 

Place on a wire rack to cool. 

What goes with red velvet pancakes?

First of all, whipped cream! That and white chocolate – so we topped ours with whipped cream and crushed seasonal M&Ms. I made my whipped cream from scratch – it is so much better than getting out that tub of Cool Whip for that red velvet pancakes topping! Some people swear by a cream cheese frosting as they used at IHOP, but I always thought it was too sickeningly sweet.

Whipped Cream Recipe

  • 3 Cups Whipping Cream
  • 1 Cup Powdered Sugar

Whip cream with sugar with an electric mixer on high until stiff peaks form.  Transfer to a pastry bag fitted with a star tip.  Pipe around each pancake, stacking them as you go.
