I add them to a lot of recipes because it ups the health factor and the family has n o real clue. It is just a simple thing to make a big difference.
These pancakes are also easy as the spice is all in the pumpkin pie puree! If you open a can of pumpkin pie puree just for this recipe, simply put the rest into a bag and toss it into your freezer. It will be there when you are ready to make this recipe again!
I know this pumpkin spice pancake recipe starts off with a box mix. That is part of what makes this so easy! I like the one step mix that you can get at Aldi for under two bucks a box. It is perfect for everything from camping to a super quick morning treat.
One quick tip if you are making “plain” pancakes from a boxed mix: doctor them up. Before you measure the water, crack a raw egg into the measuring cup, a dash of cinnamon, and a teaspoon of vanilla extract. THEN add the water that the recipe calls for. A large egg is about two ounces, and that teaspoon is another half an ounce. Let’s say you are supposed to add a cup of water (eight ounces) so you add five and a half ounces of water basically after you top off that measuring cup with the egg and extract in it.
Pumpkins are healthy! Rich in vitamins, minerals, and antioxidants, pumpkin is incredibly healthy. What’s more, its low-calorie content makes it a weight-loss-friendly food. Its nutrients and antioxidants may boost your immune system, protect your eyesight, lower your risk of certain cancers, and promote heart and skin health. Raw pumpkin has only 15 calories per 1/2 cup, and is full of iron, zinc, and fiber. It’s high in vitamin C and beta carotene. Pumpkins are also high in lutein and zeaxanthin, substances that may help prevent the formation of cataracts and reduce the risk of macular degeneration.
Flaxseeds are super healthy too! Omega-3 essential fatty acids, “good” fats that have been shown to have heart-healthy effects. Each tablespoon of ground flaxseed contains about 1.8 grams of plant omega-3s. Lignans, which have both plant estrogen and antioxidant qualities. Flaxseed contains 75 to 800 times more lignans than other plant foods. Flaxseeds also contain significantly more manganese, copper and potassium than Chia seeds which contain slightly fewer calories and more fiber.
There is no need to tell your family that this fun fall feast is really good for them. Just let them enjoy the taste and think they are getting away with a treat!
Pumpkin Spice Pancake Recipe
You will need:
- 1.5 cup of pancake mix
- ¾ cup of milk (you can use the plant-based milk of your choice instead)
- 2 eggs or 2 Tbsp flaxseeds (either one works as a binder for the gluten – flaxseeds make these vegan!)
- ½ cup of pumpkin puree
- 1 tsp of pumpkin pie puree
Instructions for our Pumpkin Spice Pancake:
Mix all ingredients together. Place inside your seasoned cast iron skillet.
Bake your pumpkin spice pancake in a 350 degree oven for 25 minutes. You CAN just make smaller pumpkin spice pancakes, one at a time on your griddle, but they don’t seem as impressive when you serve them. I just use a little whipped cream and pipe it around the edge of the pan to serve it.
