Pea and Peanut Salad is a Throwback to Supper Club Days

This is a very different, yet delightful side dish/salad that often surprises people. It SOUNDS a tad weird, but the flavors and texture really work together! Try bringing it to a potluck and watch the weary faces light up as they nibble it and then go back for more.

Ingredients:

  • 10 oz bag frozen peas
  • 1 cup dry roasted peanuts
  • 1/4 cup chopped red onion
  • 1/2 cup mayo
  • 1/4 cup ranch dressing

 Thaw and drain the peas. Stir in the onion, mayo and ranch dressing. Just before serving, stir in the peanuts.

That’s it my friends, now rip into it like a monkey on a cupcake!
