Mostly Apple Cake

It’s a challenging thing to come up with a lot of fun apple recipes when you get super deals on them in the fall and are still staring at bags of apples in February. This is a great and fairly simple little cake that is sure to impress…

Mostly Apple Cake

Ingredients:

  • 6 peeled and cut up apples. (Cut them into little pieces.) 1/2 inch
  • 3 eggs
  • 1 cup of sugar
  • 1 teaspoon on vanilla
  • 1 cup of flour
  • 1 teaspoon on baking powder
  • 1 tablespoon on cinnamon
Preheat oven to 350 degrees
I made mine in mini spring-form pans. (You could use a regular pan just spray with NON-STICK cooking spray)
Cut up all the apples and tossed them into a big bowl. Add all the ingredients all together in a separate bowl and mix well. Once those are all mixed, fold that into the apples.
Once everything is all mixed well. Evenly spread out into your pan.

Bake them in the oven for about 45 minutes or until your tooth pick comes out clean.
