Instant Pot Jalapeno Popper Mac and Cheese? I know, it sounds almost too good to be true! It is a wonderful, yet grown up version, of the traditional macaroni and cheese dish that Kraft made famous for us during our childhood. The jalapenos give a delightful zip and adult flare to this comfort food staple and will have your diners asking for seconds. Since it is made in the Instant Pot, that really isn’t hard to do!

Jalapeno Poppers Plus Mac and Cheese? Yes Please!
The two of these tasty treats, combined, make for one kick ass flavor explosion in your mouth!

Instant Pot Jalapeno Popper Mac and Cheese
You will need:
1 lb elbow macaroni
4 cups water
3 tbsp butter
2 tbsp Cajun Seasoning
1 cup evaporated milk
8 oz shredded Italian cheese
8 oz Colby jack cheese, cut into cubes
8 oz chopped bacon
1/4 C chopped jalapenos
Directions:
Add macaroni, water, butter, and Cajun seasoning, to your instant pot.

Give a quick stir so that all the ingredients are combined.

Close lid and seal valve on your Instant Pot.
Set to high pressure, 6 minutes in manual mode.
When it’s done, do a quick release.

Set the Instant Pot in warm mode.
Add in your milk and both of your cheeses.

Stir and mix until cheese is fully melted and is a creamy sauce.
Stir in your chopped bacon and jalapenos
