Ingredients for your Ham Bone Soup:
- 1 yellow onion peeled and chopped
- 2 cups baby carrots
- 1 ham bone with meat on
- 1 20 oz bag dried 15 bean soup mix
- 8 cups low sodium chicken broth
- 2 tbsp. minced garlic
- 2 tbsp. of Cajun seasoning
- 3 cups diced ham
- 1 15 oz can diced fire-roasted tomatoes undrained
- salt and pepper to taste
How to Make Ham Bone Bean Soup
Rinse the beans thoroughly, and leave in a bowl to soak for 2 hours.
Set aside the seasoning packet for later use.
Prepare your crockpot, wipe clean and turn on to HIGH.
Place the onion, carrot, ham bone, ham chunks, beans, chicken broth, cajun spice, and garlic in a slow cooker.
Cook on HIGH for 4 hours or LOW for 8 hours, or until beans are done.
At the halfway point remove the ham bone from the slow cooker.
Stir in the tomatoes, seasoning packet, and salt and pepper to taste.
Cover and cook for the rest of the time.
Sprinkle with parsley and serve
