Crock Pot Red Beans n Rice Recipe

Ingredients
- 1 pound dried red beans
- 3 cups water
- 4 cups of Chicken stock
- 2 green bell peppers, chopped
- 1 medium onion, chopped Yellow or Red
- 3 celery stalks, chopped
- 1 pound andouille sausage, Smoked sausage sliced to 1/4 inch thick
- 3 garlic cloves, chopped or 2 Tablespoons of minced garlic from a jar
- 4 tablespoons Creole seasoning ( I used Tony’s )
- 3 bay leaves
- 1 teaspoon of Chili Powder
- 2 teaspoons salt
- 2 teaspoons hot sauce
- 1 teaspoon ground black pepper
- 4 cups cooked rice
Preparation
Check red beans for any small pebbles then rinse thoroughly.
Add beans, water, and chicken broth to the crock pot.
Chop all the veggies and add to the crock pot.
Next, chop the sausage and dump it in the crock pot
Combine all the other spices,
then add them to the crock pot! Turn the crock pot on high for 7 hours. When ready to eat, prepare your rice.
Pour red beans and sausage mix over rice and serve…with corn bread makes for a perfect meal!
