Cooking Class 101: How To Make A Basic Muffin Mix

Here is a simple “go to” muffin mix base that can be transformed into a sweet or savory muffin with just a few added ingredients.  Make a few mixes of  the dry ingredients ahead and store in your pantry to save a little time {I love to store mine in a quart mason jar, they look so pretty on the pantry shelves!} or make a new batch every time you bake.  There is really no end to the recipes you can create from this simple, basic mix.

Basic Muffin Mix 

You will need:

  • 2 cups flour
  • ¾ cup sugar
  • 1 Tbsp. baking soda
  • ½ tsp salt

Directions:

To prepare; Combine dry ingredients thoroughly. Make a well in the center, add- 1 egg, 1 cup of milk, and 1/4 cup of oil. Mix just until combined, do not over mix- it will be lumpy.

At this point if desired you can gently fold in 1 cup of fresh or dried fruit, or other add ins as listed below.

Scoop into greased muffin tins  or cupcake wrappers and bake at 400° for 15-20 minutes or until tops are golden brown.

Some variations:

  • Apple Cinnamon – Use applesauce instead of vegetable oil and add 2 tsp. Cinnamon
  • Bacon & Cheddar – Add 1 cup shredded cheddar, 1 tsp. Garlic salt, and ¼ cup bacon pieces
  • Berry – Stir in 1 cup of your favorite fresh fruit; strawberries, blueberries, or raspberries
  • Cranberry Orange – Mix in 1 cup of dried cranberries and 1 tsp. Orange extract
  • Strudel -Top muffins with a mixture of ½ cup brown sugar and 2 tbsp. melted butter – sprinkle on top of muffins prior to baking.

Of course you can create your own delicious flavors by experimenting and adding in your favorite ingredients to create new and delicious variations!
