Sinful Coconut Marshmallow Gooey Cookie

There are days that you want a sweet, chewy, and chocolate treat and these Sinful Coconut Marshmallow Gooey Cookies are just the ticket! Just looking at them, it is like a party in your hand, with just the abundance of mini marshmallows and chocolate chips just looking back at you!

Sinful Coconut Marshmallow Gooey Cookie

You will need:

2 1/4 C flour
1/4 C Hershey cocoa
1 tsp baking soda
1 tsp kosher salt
1 C unsalted sweet cream butter, softened
3/4 C sugar
3/4 C light brown sugar
1 tsp vanilla extract
2 eggs
1 C Semi-Sweet Chocolate chips
2 C, divided Jet-puffed mini marshmallows
1 C mini chocolate chips
1 cookie sheet fitted with parchment paper

Directions:

Preheat your oven to 350 degrees

In a large bowl, combine the flour, cocoa baking soda and salt and mix with a whisk till combined

Using a standing mixer, cream together the butter, sugar, brown sugar and vanilla until creamy.

Add eggs, one at a time, beating well after each egg

Gradually mix in flour mixture.

Stir in chocolate chips and 1 cup of marshmallows .

In a medium bowl, combine the remaining cup of marshmallows and mini chocolate chips

Using a small ice cream scoop, scoop out some dough and roll into a ball

Roll the dough into the chocolate chip and marshmallow mixture to completely coat the dough

Place onto cookie sheet and repeat with 11 more dough balls

Bake for 10 minutes
