
Chicken Riggies Recipe

Chicken Riggies is made in upstate NY, you can also find it in a lot of areas like Madison’s old “Flatbush” neighborhood as you can find this dish in most Italian Restraunts. You tweak this to make this as a spicy dish or mild…we skip the peppers as I do not like mine too spicy. 13 Smart Points Per Serving.

You will need:

- 1 pound of boneless skinless chicken
- 3 Peppers 1 yellow, 1 red, 1 orange
- 1 8oz package of mushrooms
- 2 cups of alfredo sauce
- 1 1/2 cups of maranara sauce
- Red Pepper flakes or fresh chili peppers
- Rigatoni pasta
1.Cook cubed chicken over medium heat just until they begin to turn white.
2.Add mushrooms to chicken and cook for 5 minutes.

3.Add peppers and cook 5-7 minutes (I usually season the veggies and chicken with salt and pepper at this point).

Add 1 1/2 cups of marinara sauce and 2 cups of alfredo sauce over a medium heat If you like spicy foods you can add in Red Hot peppers or pepper flakes. Stir mixture, your sauce should look orange. Continue cooking on a medium heat about 10 minutes or until all veggies are tender.

Pour sauce over your riggatoni pasta and sprinkle with grated parm cheese and red pepper flakes (optional) then rip into it like a monkey on a cupcake!
