The best part of summer is the family get-togethers, backyard barbeques with friends and church potlucks! If you’re tired of bringing the same old boring dish and want something quick, easy and guaranteed to please a crowd, you can’t miss this simple broccoli salad!

What Does Broccoli Salad Go With?

While this is a great dish to take to a pot luck, it is also fantastic to make for serving at home. Broccoli salads with these salty ingredients, such as fried bacon or cheese, go particularly well with roasted meats, especially pork and beef.

How long is broccoli salad good for in the fridge?

Best of all, you can make it ahead of time and keep it in the fridge for up to 3 days! Much longer than those 3 days and you are starting to loose the crunch that makes this so tasty. But be prepared for your friends to request you bring this yummy salad time and time again!

Broccoli Crunch Salad

Ingredients:

  • 3 cups of fresh broccoli
  • 1 large red onion
  • ¾ cup of bacon bits
  • 1 cup of shredded cheddar cheese
  • ½ cup of toasted sunflower seeds
  • ½ cup of sliced almonds

    Dressing:
  • 1 cup of mayonnaise
  • ½ cup of sugar

How do you cut broccoli for broccoli salad?

  1. Wash the broccoli thoroughly.
  2. Pick free leaves from the broccoli.
  3. Cut the florets free beneath the flower canopy.
  4. Cut the florets apart, starting from the outside in.
  5. Trim the stems of your florets to an even length.
  6. Cut your florets into smaller pieces, if desired.

What can I do with broccoli stalks?

If you only want the florets of the broccoli for the salad, that leaves the stalks! We are thrifty people so don’t throw them out – they will make a great cream of broccoli soup! You can grate them to make broccoli coleslaw, or even cut into strips and add to your stir fry! It’s another great way to strech meat, but adding a bunch of veggies and serving it over rice!

Finely chop the red onion, and place in a large mixing bowl with the broccoli. Cook and crumble bacon into small bits and add to the bowl. Add the rest of the dry ingredients and mix well. In a small bowl, mix mayonnaise with sugar until sugar is dissolved. Add the dressing to the mixing bowl with other ingredients and stir well, until everything is coated in the delicious dressing.

Eat right away or keep it in the refrigerator until you’re ready for dinner. This recipe is quick and easy to whip up and stays good for up to 3 days in the fridge. You can add anything you’d like to this recipe! Some things we’ve successfully added includes:

  • Chopped apples
  • Carrots
  • Raisins
  • Dried cranberries
  • Celery
  • Sliced grapes
