Banana, Maple & Bacon Muffins to Drool Over

We believe that bacon is the candy of meats. Seriously. That is why these banana, maple bacon muffins just ROCK. WHen y ou take a bacon muffin and add in banana, and then maple too? Be prepared to start drooling!
We love this recipe because it is simple, the muffins are wonderfully moist and that cinnamon-vanilla combination really adds a nice layer of flavor. It makes 12 larger sized muffins but you could easily double the recipe. We make some with and without the bacon glaze, so we can freeze them for Miss Sarah’s breakfasts.
Banana, Maple Bacon Muffins
- 1½ cups all-purpose flour
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 tablespoon cinnamon
- 3 large, very ripe bananas, mashed
- ¾ cup white sugar
- 1 egg
- 1 teaspoon vanilla
- ⅓ cup butter, melted
- 1-2 slices of bacon, crumbled
- 1-2 t maple syrup
- 1/4 – 1/2 cup powdered sugar
Use the powdered sugar and maple syrup to make a glaze.
Glaze the cupcakes and then add a sprinkling of crumbled bacon.
Now, rip into them like a monkey on a cupcake – you won’t even need butter!
