If you have been playing with us – today is day #10!
If you haven’t, you can see the starter HERE

Today, we are making Strawberry Lemonade Cupcakes!

1 cup Amish Friendship Bread Starter
1 cup sugar
1 1/2 teaspoons baking powder
1/2 teaspoon salt
1/2 teaspoon baking soda
2 cups flour
1 small box sugar-free strawberry Jell-O gelatin
3 eggs
1/2 cup milk
1/2 cup oil
1/2 cup applesauce
1/2 teaspoon vanilla

Directions:
Preheat oven to 350° F (177° C).
In a large mixing bowl, add ingredients as listed, mixing well. Line muffin tins with cupcake wrappers (YES, I know mine are Christmassy — I bought them on holiday clearance, LOL) and fill muffin cups halfway. Bake for 20 minutes or until toothpick inserted in the center comes out clean. Let cool and then frost. It made 23 for us.

Frosting:
2 cups powdered sugar
1 tsp lemon extract
2 tsp lemon juice
1/4 cup butter or shortening.
Just let them all rip together in the mixer until nice and fluffy – then frost you cupcakes. I also let Miss Sarah put a little pink sprinkles and yellow sprinkles on them so they were “pretty”

    • Okay silly question. After feeding the starter for 10 days, isn’t there remaining batter after taking out the 4 cups? I just made the Amish Cinnamon Bread and took out 4 starters…so when I start feeding my new starter, won’t I have remaining batter again? Is that what you use for this recipe? I just notice you say ‘1 cup starter’ not like the breads where it calls to ‘add to the remaining batter’….thanks!

    • There are NO silly questions Michelle!
      🙂
Usually there is about 1 cup of starter left every 10 days. SOME recipes call for 2 cups, where you only pull out 3 cups for the next round/giveaways. Most just use 1 cup – or the remaining batter.

      Hope that helps!
      🙂

    • Awesome! It helps a ton, thanks Danelle!
