Scrumptious Air Fryer Parmesan Chicken

Ahhh… one of my favorites: Parmesan Chicken. The only problem with chicken parm? The bonus calories from the fried chicken cutlets. Using the Air Fryer, this recipe is lightened up and yet, still tasty! Actually, it is better than tasty – it is Scrumptious Air Fryer Parmesan Chicken!
Scrumptious Air Fryer Parmesan Chicken
You will need:
4 skinless chicken breasts,thinly sliced
1 cup Panko bread crumbs
1/2 cup Parmesan cheese grated
1/2 cup Mozarella cheese shredded
3 eggs beaten
3/4 cup Marinara sauce
salt and pepper to taste
Olive oil cooking spray
1 jar of Marinara sauce
1 package of spaghetti
Directions:
Preheat the Air Fryer to 460
Spray the basket with cooking spray if needed in your machine
Place the chicken breasts on a hard surface
Combine the Panko breadcrumbs, Parmesan, and seasonings in a bowl large enough to dip the chicken breasts
Stir to combine
Place the eggs in a bowl, beat your eggs until frothy
Dip the chicken in the egg and then in the Panko crumbs mixture
Place your chicken in the Air Fryer
Spray the top of the chicken with olive oil cooking spray
Cook for 7 minutes
Place the chicken on a baking sheet
Set your oven temp to broil on high
Top each of the breasts with marinara sauce and the shredded mozzarella
Cook for 3 minutes or until cheese has melted
Cook the spaghetti as directed on the package
Once cooked toss the noodles in the left over marinara
Place the chicken on top of the noodles
Serve and enjoy!
