This is one of those recipes where it’s hard to find one flaw – each bite has the perfect balance of sweet, salty, tangy, spicy flavors all combined into one amazing meal! The recipe is so easy and makes an impressive presentation – you can’t go wrong!
What does hasselback mean?
It means slicing the chicken into thin, long slices and inserting peppers and onions to infuse more flavor. This video will show you the technique, but on potatoes. It works beautifully for them too!

Slicing through the breast meat of the chicken exposes some of its interior while keeping it tightly held together by cheesecloth or kitchen twine (optional). How to Make Air Fryer Hasselback Fajita Chicken
Hasselback Fajita Chicken Ingredients:
- 4 chicken breasts
- 2 tbsp olive oil
- 2 tbsp FAJITA seasoning
- 1/2 each red, yellow, and orange pepper- sliced
- 1 red onion, sliced
- 1/2 cup shredded cheese – Colby Jack and Cheddar mix
- Cilantro
- Salsa and sour cream
Directions:
Preheat Air fryer if needed to the pre-set chicken option or 380
Make horizontal cuts across each chicken breast
Rub your chicken breasts with olive oil and fajita seasoning
Set to the side
Prepare vegetables as directed
Add bell peppers and red onions to each cut
Place the chicken in the air fryer vegetables side facing up.
Cook chicken for 15 min
Remove from the air fryer and place on a parchment sheet covered baking pan
Top the chicken with cheese
Set your oven to broil on high
Place in the oven until cheese is melted
Remove from oven and serve
Garnish cilantro, salsa and sour cream
