Red Lobster Coconut Shrimp

One thing I love is coconut shrimp. I would stalk Red Lobster and wait for their endless shrimp promotion so I could skip the salad and potato (they would go right into a box for home) and stuff myself with coconut shrimp, shrimp scampi, and wood-fired shrimp on a skewer.

It is no secret that prices are climbing even at your local grocery store. That means restaurants are raising their prices also and that weekly “date night” is getting kind of expensive. A few years ago, I started making my own coconut shrimp at home. It is easy and so much cheaper!
