One thing I miss about my new diet and lifestyle, coconut shrimp. I would stalk Red Lobster and wait for their endless shrimp promotion so I could skip the salad and potato (they would go right into a box for home!) and stuff myself with coconut shrimp, shrimp scampi and wood fired shrimp on a skewer. Not only can I not possibly eat that much any more, but I also can’t deal with excessive fats and the deep frying can be just enough to “get me”. My answer? Our Succulent Air Fryer Coconut Shrimp recipe!

spray can of olive oil
